Instructions
- 1. In a large bowl, beat butter with a mixer on medium speed to high for 30 seconds.
- 2. Add sugar and baking powder and beat until combined.
- 3. Beat in egg and vanilla extract until combined.
- 4. Beat in salt and Oatsome Oat Flour until all the flour is mixed in well. The dough will be a little sticky.
- 5. Remove the dough from the bowl into a dish, put it in plastic wrap, and chill for 1 hour or overnight.
- 6. Preheat oven to 375 degrees.
- 7. Remove dough from the fridge and let warm slightly.
- 8. On a lightly floured surface, rollthe dough to 1/8 to 1/4 inch thickness.
- 9. Cut out into desired shapes using a 2-to-3-inch cookie cutter (dip cutters into oat flour to prevent them from sticking).
- 10. Place cutouts 1 inch apart on parchment-lined cookie sheets.
- 11. Bake for 7 to 8 minutes or until the edges are firm but not browned.
- 12. Let cool on a wire rack.
- 13. In an extra-large bowl, beat 1 cup of softened butter with a mixer for 2 minutes or until creamy.
- 14. Beat in 1 cup powdered sugar.
- 15. Add 2 Tbsp heavy cream, 1 tsp vanilla, and a dash of salt. Beat on lowspeed until combined.
- 16. Gradually beat in 3 cups of additional powdered sugar just until combined. Beat on medium speed 5 minutes or until fluffy, scraping bowl.
- 17. Add 1 Tbsp heavy cream and 1 tsp orange zest if desired. Beat on high for 1 minute more.
- 18. Tint buttercream frosting with food coloring; frost cookies. If desired, decorate with candy
