Ingredients

  • Oat Flour Sugar Cookies:
  • 1 1/2 cups of butter
  • 1 cup sugar
  • 1/4 tsp baking powder
  • 1 egg
  • 1 tsp. almond extract (optional)
  • 3/4 tsp salt
  • Butter Cream Recipe:
  • 1 cup butter
  • 4 cups powdered sugar
  • 3 Tbsp heavy cream
  • 1 tsp orange zest (optional)

Instructions

  1. 1. In a large bowl, beat butter with a mixer on medium speed to high for 30 seconds.
  2. 2. Add sugar and baking powder and beat until combined.
  3. 3. Beat in egg and vanilla extract until combined.
  4. 4. Beat in salt and Oatsome Oat Flour until all the flour is mixed in well. The dough will be a little sticky.
  5. 5. Remove the dough from the bowl into a dish, put it in plastic wrap, and chill for 1 hour or overnight.
  6. 6. Preheat oven to 375 degrees.
  7. 7. Remove dough from the fridge and let warm slightly.
  8. 8. On a lightly floured surface, rollthe dough to 1/8 to 1/4 inch thickness.
  9. 9. Cut out into desired shapes using a 2-to-3-inch cookie cutter (dip cutters into oat flour to prevent them from sticking).
  10. 10. Place cutouts 1 inch apart on parchment-lined cookie sheets.
  11. 11. Bake for 7 to 8 minutes or until the edges are firm but not browned.
  12. 12. Let cool on a wire rack.
  13. 13. In an extra-large bowl, beat 1 cup of softened butter with a mixer for 2 minutes or until creamy.
  14. 14. Beat in 1 cup powdered sugar.
  15. 15. Add 2 Tbsp heavy cream, 1 tsp vanilla, and a dash of salt. Beat on lowspeed until combined.
  16. 16. Gradually beat in 3 cups of additional powdered sugar just until combined. Beat on medium speed 5 minutes or until fluffy, scraping bowl.
  17. 17. Add 1 Tbsp heavy cream and 1 tsp orange zest if desired. Beat on high for 1 minute more.
  18. 18. Tint buttercream frosting with food coloring; frost cookies. If desired, decorate with candy
