Gluten Free Red Velvet Cup Cakes

Ingredients

Servings: 1
  • 1/2 cup Coconut Sugar
  • 1 cup Sugar
  • 2 Tbsp Cocoa Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 2 Tbsp Vanilla Extract
  • 3 each Eggs
  • 2 tsp Vinegar
  • 2 tsp Red Food Color - Optional
  • 1/2 cup Oil
  • 1 1/4 cup Water
  • Frosting Ingredients:
  • 16 oz Powder Sugar
  • 8 oz Cream Cheese - Room Temp
  • 4 oz Butter - Room Temp

Instructions

  1. 1. Preheat oven to 375 degrees.
  2. 2. Combine all dry ingredients into a medium sized bowl and whisk together.
  3. 3. Add all wet ingredients and whisk for about 2 minutes and let rest for 1 minute.
  4. 4. Scoop into muffin pan lined with cupcake liners.
  5. 5. To prepare frosting add butter to the bowl of an electric mixer fitted with a paddle attachment and cream.
  6. 6. Bake for 18-20 minutes or until the toothpick inserted in middle comes out clean.
  7. 7. Remove from the oven and cool. While cooling prepare cream cheese frosting.
  8. 8. Add cream cheese to butter and cream again until fully incorporated. Scrape down sides of bowl.
  9. 9. Add in powder sugar and cream together until smooth. Do not over mix or frosting will become runny.
  10. 10. Frost cooled cupcakes and top with desired decorations.
