Instructions
- 1. Preheat oven to 375 degrees.
- 2. Combine all dry ingredients into a medium sized bowl and whisk together.
- 3. Add all wet ingredients and whisk for about 2 minutes and let rest for 1 minute.
- 4. Scoop into muffin pan lined with cupcake liners.
- 5. To prepare frosting add butter to the bowl of an electric mixer fitted with a paddle attachment and cream.
- 6. Bake for 18-20 minutes or until the toothpick inserted in middle comes out clean.
- 7. Remove from the oven and cool. While cooling prepare cream cheese frosting.
- 8. Add cream cheese to butter and cream again until fully incorporated. Scrape down sides of bowl.
- 9. Add in powder sugar and cream together until smooth. Do not over mix or frosting will become runny.
- 10. Frost cooled cupcakes and top with desired decorations.
