- 1. Preheat oven to 350ºF—line baking sheets with parchment paper.
- 2. In the bowl of an electric mixer, beat the vegan butter, granulated sugar, and banana until well combined and fluffy, about 2 minutes.
- 3. Beat in the egg, vanilla extract, salt, baking powder, and baking soda until combined.
