Instructions
- 1. Preheat the oven to 350°F.
- 2. Line the bottom of a 9x9 pan with parchment paper, or cooking spray.
- 3. To make the crust & crumble, place the brown sugar, melted coconut oil, and vanilla extract in a bowl and whisk to combine. Add in the oat flour, regular oats, ground cinnamon, baking powder, and salt, and stir to combine. The mixture should be a little dry and crumbly. Reserve 1 cup of the mixture, this will be your crumble topping.
- 4. Add the oat mixture to the prepared baking pan. Press the mixture into the bottom of the pan in an even layer.
- 5. Place blueberries, lemon, coconut sugar, and cornstarch in a bowl and stir to combine. Place the blueberries over the crust in an even layer.
- 6. Evenly sprinkle the remaining crumble mixture over the top of the blueberries.
- 7. Bake the bars for 45 minutes. Remove the bars from the pan and let sit for 10 minutes.
