  1. 1. Whisk 1 cup rolled oats and 1 cup oat milk together in a large bowl. Let stand for 10 minutes for the oats to soften.
  2. 2. Add the oil, eggs, and sugar to the oats, and whisk to combine. Add oat flour blend, baking powder, salt, and ground cinnamon, and whisk until combined. Let stand for 5 minutes more.
  3. 3. Meanwhile, heat a large cast iron or nonstick skillet over medium-high heat.
  4. 4. Add a little oil to the pan and swirl to coat. Drop the batter into the pan in 2-tablespoon portions and top with sliced bananas, cooking 3 at a time. Cook until the edges are light golden color and set, about 2-3 minutes. Flip the pancakes and cook until the other side is golden-brown, 2 to 3 minutes more.
