- 1 cup rolled oats
- 1 cup shredded zucchini (about one small zucchini)
- 2 cups Oatsome oat milk
- Pinch of salt and pepper
- Toppings: avocado, egg, tomatoes, etc.
- Combine the oats, shredded zucchini, and Oatsome in a small saucepan over medium high heat. Heat until simmering, then reduce heat to medium low and cook for 8-10 minutes. If too thick, add more Oatsome to reach desired consistency.
- Divide the oatmeal between 2 bowls and top with your desired toppings.
