Ingredients

  • 2 cups packed brown sugar
  • 1 cup avocado oil
  • 1 1/2 cups solid pack pumpkin puree
  • 2 eggs
  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 1/2 Tbsp ground cinnamon
  • 1/2 Tbsp ground ginger
  • 1/2 tsp ground cloves
  • Filling
  • 1 egg white
  • 1/4 tsp cinnamon
  • 3 cups confectioners' sugar
  • 3/4 cup plant-based butter

Instructions

  1. 1. Preheat the oven to 350 degrees °F. Line a baking sheet with parchment paper.
  2. 2. Combine all the dry ingredients in a bowl and gently stir to combine. In a mixer combine the oil, brown sugar, pumpkin, and eggs, and beat w ell. Add the dry ingredients and mix well.
  3. 3. Scoop dough onto the prepared baking sheets, leaving room between each cookie as they will spread during baking. Bake at 350 degrees F for 12 to 15 minutes. Let cookies cool then make sandwiches from two cookies f illed with Whoopie Pie Filling.
  4. 4. To Make Whoopie Pie Filling: Beat egg white and mix with Oatsome Oat Milk, add the powdered sugar and mix well then beat in the plant - based butter and cinnamon and continue to beat until light and fluffy.
