- •1 cup avocado oil
- •1 1/2 cups solid pack pumpkin puree
- •2 eggs
- •3 cups all-purpose flour
- •1 tsp salt
- •1 tsp baking powder
- •1 tsp baking soda
- •1 tsp vanilla extract
- •1 1/2 Tbsp ground cinnamon
- •1/2 Tbsp ground ginger
- •1/2 tsp ground cloves
- •Filling
- •1 egg white
- •
- •1/4 tsp cinnamon
- •3 cups confectioners' sugar
- •3/4 cup plant-based butter
Instructions
- 1. Preheat the oven to 350 degrees °F. Line a baking sheet with parchment paper.
- 2. Combine all the dry ingredients in a bowl and gently stir to combine. In a mixer combine the oil, brown sugar, pumpkin, and eggs, and beat w ell. Add the dry ingredients and mix well.
- 3. Scoop dough onto the prepared baking sheets, leaving room between each cookie as they will spread during baking. Bake at 350 degrees F for 12 to 15 minutes. Let cookies cool then make sandwiches from two cookies f illed with Whoopie Pie Filling.
- 4. To Make Whoopie Pie Filling: Beat egg white and mix with Oatsome Oat Milk, add the powdered sugar and mix well then beat in the plant - based butter and cinnamon and continue to beat until light and fluffy.
