Pumpkin Pie Baked Oatmeal

  • For the wet ingredients:
  • 1 (15 ounce) can pumpkin puree (approximately 2 cups)
  • 2 eggs
  • 1 1/4 cup Oatsome Oat Milk
  • 1/3 cup coconut sugar
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • For the dry ingredients:
  • 2 1/2 cups Oatsome Organic Rolled Oats
  • 2 tsp baking powder
  • 1 Tbsp pumpkin pie spice
  • 1/4 tsp salt
  • 1/2 cup chopped pecans
  • Topping:
  • 1/2 cup non-dairy yogurt
  • 2 Tbsp maple syrup
  • 1 tsp cinnamon


  1. Preheat the oven to 350 ° F. Grease a 9×9 inch pan and set aside.
  2. In a large bowl, whisk together the pumpkin, eggs, oat milk, coconut sugar, pure maple syrup, and vanilla until well combined.
  3. Add the dry ingredients to the bowl with the wet ingredients: Oatsome Organic Rolled Oats, pumpkin pie spice, baking powder, and salt. Mix until combined.
  4. Pour mixture into prepared pan and smooth top, and sprinkle with chopped pecans.
  5. Bake for 35-45 mins or until the edges are slightly golden brown and the middle is set. Allow to cool for 10 minutes while you make the topping if desired. 
  6. Whisk together the non-dairy yogurt, maple syrup, and cinnamon in a small bowl. Serve and drizzle with topping if desired.
