Ingredients
- For the wet ingredients:
- 1 (15 ounce) can pumpkin puree (approximately 2 cups)
- 2 eggs
- 1 1/4 cup Oatsome Oat Milk
- 1/3 cup coconut sugar
- 1/4 cup pure maple syrup
- 1 tsp vanilla extract
- For the dry ingredients:
- 2 1/2 cups Oatsome Organic Rolled Oats
- 2 tsp baking powder
- 1 Tbsp pumpkin pie spice
- 1/4 tsp salt
- 1/2 cup chopped pecans
- Topping:
- 1/2 cup non-dairy yogurt
- 2 Tbsp maple syrup
- 1 tsp cinnamon
Directions
- Preheat the oven to 350 ° F. Grease a 9×9 inch pan and set aside.
- In a large bowl, whisk together the pumpkin, eggs, oat milk, coconut sugar, pure maple syrup, and vanilla until well combined.
- Add the dry ingredients to the bowl with the wet ingredients: Oatsome Organic Rolled Oats, pumpkin pie spice, baking powder, and salt. Mix until combined.
- Pour mixture into prepared pan and smooth top, and sprinkle with chopped pecans.
- Bake for 35-45 mins or until the edges are slightly golden brown and the middle is set. Allow to cool for 10 minutes while you make the topping if desired.
- Whisk together the non-dairy yogurt, maple syrup, and cinnamon in a small bowl. Serve and drizzle with topping if desired.
