  • For the wet ingredients:
  • 1 (15 ounce) can pumpkin puree (approximately 2 cups)
  • 2 eggs
  • 1 1/4 cups Oatsome Oat Milk
  • 1/3 cup coconut sugar
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • For the dry ingredients:
  • 2 1/2 cups Oatsome Organic Rolled Oats
  • 2 tsp baking powder
  • 1 Tbsp pumpkin pie spice
  • 1/4 tsp salt
  • 1/2 cup chopped pecans
  • Topping:
  • 1/2 cup non-dairy yogurt
  • 2 Tbsp maple syrup
  • 1 tsp cinnamon

Instructions

  1. 1. Preheat the oven to 350 ° F. Grease a 9x9 inch pan and set aside.
  2. 2. In a large bowl, whisk together the pumpkin, eggs, oat milk, coconut sugar, pure maple syrup, and vanilla until well combined.
  3. 3. Add the dry ingredients to the bowl with the wet ingredients: Oatsome Organic Rolled Oats, pumpkin pie spice, baking powder, and salt. Mix until combined.
  4. 4. Pour mixture into prepared pan and smooth top, and sprinkle with chopped pecans.
