Ingredients
- 1 cup Oatsome Oatmilk
- 3 eggs (for a vegan version, replace with “flax eggs” – in this case, whisk 2 tablespoons of ground flaxseed with 1/3 cup water)
- 1 Tbsp vanilla extract
- 1/4 tsp sea salt
- 3 shakes of cinnamon
- 6-8 slices of 3/4 inch toast. I used a sourdough loaf from a local bakery. I recommend using a thick bread like Challah that you can cut into thick pieces. Important note: the bread should be a bit stale! The best way to achieve it is to cut up the bread as soon as you buy it, and wait a couple of days.
- Coconut oil, butter or plant-based butter for frying
- Toppings: Fresh berries, maple syrup, hemp seeds
Directions
Whisk together oat milk, eggs (or flax eggs), maple syrup, sea salt, and cinnamon. Let the mixture thicken.
Soak a slice of bread in the oat milk mixture from 2 minutes to overnight (depending on your level of patience), and shake off excess.
Heat 2 tablespoons of oil in a frying pan.
Fry for about 3 minutes on each side, or until golden brown.
Repeat with each slice.
Serve warm with fresh berries and a drizzle of maple syrup.
