Matcha Lava Baked Oats

Ingredients

Servings: 1
  • 2 ripe bananas
  • 1 cup rolled oats
  • 2 eggs
  • 2 Tbsp sweetener of choice
  • 2 tsp baking powder
  • 2 Tbsp chai concentrate
  • topping:
  • 1/4 cup vanilla coconut yogurt
  • 2 tsp matcha powder

Instructions

  1. 1. Preheat the oven to 350°F. Grease 2 ramekins or oven-safe pan with cooking spray.
  2. 2. Place banana, oats, egg, sweetener, baking powder, and chai concentrate into a blender and blend until smooth.
  3. 3. Divide between both ramekins and bake for 20-25 minutes, until a toothpick inserted in the center comes out with just a couple of crumbs.
  4. 4. Remove from oven and cool slightly.
  5. 5. Combine yogurt and matcha powder and mix until smooth and creamy.
  6. 6. Top baked oats with matcha yogurt.
