Lemon Poppyseed Oatmeal

Ingredients

  • 1 cup Oatsome Organic Rolled Oats
  • 2 cups Oatsome Barista Organic Oat Milk
  • 1 Tbsp fresh lemon juice
  • 2 Tbsp honey or sweetener of choice
  • 1/4 tsp salt
  • 2 Tbsp lemon curd
  • 1 1/2 Tbsp poppy seeds
  • Toppings:
  • blueberries, yogurt, lemon curd and poppy seeds

Directions

  1. Add the oats, oat milk, lemon juice, honey, and salt to a large, non-stick pot over high heat.
  2. Bring to a boil, then reduce the heat to medium-low to keep at a simmer.
  3. Cook for 10-12 minutes, stirring occasionally to prevent anything from sticking to the bottom of the pot.
  4. Turn off the heat once the oats are tender and have thickened to your liking, then stir in the poppy seeds and lemon curd.
  5. Top with blueberries, yogurt, lemon curd and a sprinkle of poppy seeds.
  6. Enjoy your Lemon Poppyseed Oatmeal!
