- Bread Ingredients:
- ⅓ cup oil
- 2 large eggs
- 3 Tbsp lemon juice
- 1 ½ cups Oatsome Oat Flour Blend
- 1 tsp baking powder
- 1 tsp salt
- ½ cup Oatsome Original Oat Milk
- 1 cup fresh or frozen blueberries
- 2 Tbsp grated lemon zest
- 1 cup white sugar
- Glaze Ingredients:
- 1/2 cup powdered sugar
- 1 Tbsp lemon juice
Directions
- Preheat the oven to 350°F (175°C). Lightly grease an 8×4-inch loaf pan.
- Prepare the bread batter: Beat together sugar, oil, eggs, and lemon juice in a mixing bowl.
- Combine Oatsome Oat Flour Blend, baking powder, and salt in a separate bowl. Stir in the egg mixture alternately with Oatsome Original Oat Milk. Fold in blueberries and lemon zest. Pour the batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center of the loaf comes out clean, 60 to 70 minutes. Cool the bread in the pan for 10 minutes.
- Meanwhile, prepare the glaze topping: Stir together the sugar and lemon juice in a small bowl until smooth.
- Remove the bread from the pan and drizzle with glaze. Continue to cool on a wire rack.
