Gluten-Free Lemon Blueberry Bread

  • Bread Ingredients:
  • ⅓ cup oil
  • 2 large eggs
  • 3 Tbsp lemon juice
  • 1 ½ cups Oatsome Oat Flour Blend
  • 1 tsp baking powder
  • 1 tsp salt
  • ½ cup Oatsome Original Oat Milk
  • 1 cup fresh or frozen blueberries
  • 2 Tbsp grated lemon zest
  • 1 cup white sugar
  • Glaze Ingredients:
  • 1/2 cup powdered sugar
  • 1 Tbsp lemon juice


  1. Preheat the oven to 350°F (175°C). Lightly grease an 8×4-inch loaf pan.
  2. Prepare the bread batter: Beat together sugar, oil, eggs, and lemon juice in a mixing bowl.
  3. Combine Oatsome Oat Flour Blend, baking powder, and salt in a separate bowl. Stir in the egg mixture alternately with  Oatsome Original Oat Milk. Fold in blueberries and lemon zest. Pour the batter into the prepared pan.
  4. Bake in the preheated oven until a toothpick inserted into the center of the loaf comes out clean, 60 to 70 minutes. Cool the bread in the pan for 10 minutes.
  5. Meanwhile, prepare the glaze topping: Stir together the sugar and lemon juice in a small bowl until smooth.
  6. Remove the bread from the pan and drizzle with glaze. Continue to cool on a wire rack.
