Gluten-Free Banana Bread

Ingredients

  • 2 cups sugar
  • 1 cup BBF Avocado oil
  • 5 eggs
  • 1 ½ pounds of ripe bananas
  • 1 ½ Tbsp vanilla extract
  • 2 tsp baking soda
  • 1 ½ tsp salt
  • 4 3/4 cups Oatsome Oat Flour Blend

Directions

Preheat the oven to 350°F.

Spray mini loaf pans with pan spray.

In a Mixing bowl combine bananas, oil, sugar, vanilla, and eggs and beat till smooth.

Add in oat flour, salt, and soda. Mix then scrape the sides of the bowl and mix on speed 2 for 5-6 minutes.

Divide batter into pans. In a small bowl pour 1 Tbsp of oil, with a rubber spatula, dip it into the oil and then into the center of your banana bread loaf drawing a line all the way across the middle, keep dipping and repeating. This allows the bread to bloom in the oven and have a nice split top after baking.

Bake for 45-50 minutes.
