- 4 bananas, cut into 4 chunks, frozen
- ½ cup oat milk
- 1/2 tsp vanilla extract
- 1/2 cup vegan chocolate chips
- 8 of your favorite vegan oatmeal cookies
In a food processor, blend bananas, oat milk, and vanilla until smooth. Mix in chocolate chips. Place in a freezer-safe container and freeze for at least two hours, or overnight. Let sit at room temperature for 10 minutes to soften before scooping onto one side of the oatmeal cookie and sandwiching it with another cookie. Make ahead of time and freeze for 1 hour. Remove from the freezer and let soften 5 minutes before serving.
