Ingredients
- 2 medium sized sweet potatoes
- 1/4 cup Oatsome Barista Oat Milk
- 2-3 tbsp date sugar
- 1/8 tsp ground cinnamon
- 1/4 cup candied pecans or walnuts
- Non - Dairy Whipped topping
Directions
- Preheat oven to 375°F.
- Scrub and rinse the sweet potatoes. Prick them with a fork 3-4 times and place on a baking sheet.
- Roast for about 50 minutes, or until tender.
- Let them cool slightly, then peel off the skins.
- In a blender, combine the sweet potatoes with Oatsome Barista Oat Milk, date sugar, and cinnamon. Blend until smooth.
- Spoon into serving dishes, top with non-dairy whipped topping and chopped nuts, and chill for at least 30 minutes.
