Dairy-Free Sweet Potato Pudding

Ingredients

  • 2 medium sized sweet potatoes
  • 1/4 cup Oatsome Barista Oat Milk
  • 2-3 tbsp date sugar
  • 1/8 tsp ground cinnamon
  • 1/4 cup candied pecans or walnuts
  • Non - Dairy Whipped topping

Directions

  1. Preheat oven to 375°F.
  2. Scrub and rinse the sweet potatoes. Prick them with a fork 3-4 times and place on a baking sheet.
  3. Roast for about 50 minutes, or until tender.
  4. Let them cool slightly, then peel off the skins.
  5. In a blender, combine the sweet potatoes with Oatsome Barista Oat Milk, date sugar, and cinnamon. Blend until smooth.
  6. Spoon into serving dishes, top with non-dairy whipped topping and chopped nuts, and chill for at least 30 minutes.
