Ingredients
- Oatmik Sweetened Condensed:
- 1 carton Oatsome Oat Milk
- 1 cup sugar
- Cake:
- 1 cup flour
- 3/4 cup sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 3 eggs
- 1/2 cup Oatsome Oat Milk
- 2 cups non-dairy whipped topping
- 2 cups fresh strawberries
Directions
To make sweetened condensed add 1 carton of oat milk (4 cups) and 1 cup sugar to a medium-sized saucepan and bring to a simmer. Continue simmering until it has reduced by half. Remove from heat and cool.
In a medium-sized bowl add flour, sugar, baking powder, and salt and whisk to combine. In a separate bowl whisk together eggs and oat milk until lightly frothy, then add the wet into the dry ingredients and stir until combined and batter is smooth. Pour into a 9×9 square baking pan. Bake at 325°F until the cake springs back when touched. It takes about 20-25 minutes. Let the cake cool completely.
To assemble the cake: Gently poke the cake with a fork, pour cooled sweetened condensed oat milk over the cake, and let it soak into the cake. Top with non-dairy whipped topping and sliced strawberries. Let chill for at least 1 hour and serve.
