Carrot Cake Overnight Oats

Ingredients

  • 1 cup Oatsome Overnight Oats
  • 1 cup Oatsome Oat Milk or water
  • 1/4 cup shredded carrots
  • 2 tsp cinnamon
  • 1/4 cup chopped walnuts
  • 1 tsp vanilla extract
  • Topping:
  • 1 cup vanilla yogurt
  • 2 Tbsp cheesecake jello mix
  • carrots and nuts to garnish

Directions

  1. Combine Oatsome Overnight Oats, carrots, cinnamon, walnuts, Oatsome Oat Milk, and vanilla extract in a medium bowl. Stir to combine. Refrigerate for 4 hours or overnight.
  2. When ready, remove it from the fridge and prepare the topping.
  3. In a small bowl, stir vanilla yogurt and cheesecake-flavored Jello mix until smooth and creamy. If layering, scoop a little of the topping into the bottom of a glass or jar, then scoop chilled overnight oats on top and then layer again with yogurt topping and garnish as desired.
