Ingredients
- 1 ripe banana
- ½ cup quick oats
- 2 Tbsp Oatsome Oat Milk
- 1 egg
- 1 Tbsp sweetener of choice
- 1 tsp baking powder
- ½ tsp vanilla extract
- 1 tsp almond extract
- 1-2 tsp sprinkles (plus additional 1-2 tsp for topping if desired)
- 1 Tbsp crushed vanilla cookies (plus an additional 1 Tbsp for topping if desired)
- Topping:
- 2 Tbsp vanilla yogurt
- 1 tsp sweetener of choice
Directions
Preheat the oven to 350°F. Grease a ramekin or oven-safe pan with cooking spray.
Place banana, oats, egg, sweetener, baking powder, and extracts into a blender and blend until smooth.
Fold in sprinkles and the cookie pieces. Add more sprinkles and cookie pieces on top if desiredBake for 20-25 minutes, until a toothpick inserted in the center comes out with just a couple of crumbs.
Combine yogurt and sweetener. Top baked oats and sprinkle with more sprinkles and cookie crumbs if desired.
