Ingredients

  • 1 ripe banana
  • 1/2 cup quick oats
  • 1 egg
  • 1 Tbsp sweetener of choice
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1 tsp almond extract
  • 1-2 tsp sprinkles (plus additional 1-2 tsp for topping if desired)
  • 1 Tbsp crushed vanilla cookies (plus an additional 1 Tbsp for topping if desired)
  • Topping:
  • 2 Tbsp vanilla yogurt
  • 1 tsp sweetener of choice

Instructions

  1. 1. Place banana, oats, egg, sweetener, baking powd er and extracts into a blender and blend until smooth. Fold in sprinkles and the cookie pieces. Pour baked oatmeal cake batter into a microwave safe bowl. Add more sprinkles and cookie pieces on top if desired.
  2. 2. Microwave for 2 - 3 minutes. Check after 2 minutes as the power of microwaves can vary! A toothpick should come out clean when inserted. Combine yogurt and sweetener. Top baked oats and sprinkle with more sprinkles and cookie crumbs if desired.
