- •1 ripe banana
- •1/2 cup quick oats
- •
- •1 egg
- •1 Tbsp sweetener of choice
- •1 tsp baking powder
- •1/2 tsp vanilla extract
- •1 tsp almond extract
- •1-2 tsp sprinkles (plus additional 1-2 tsp for topping if desired)
- •1 Tbsp crushed vanilla cookies (plus an additional 1 Tbsp for topping if desired)
- •Topping:
- •2 Tbsp vanilla yogurt
- •1 tsp sweetener of choice
Instructions
- 1. Place banana, oats, egg, sweetener, baking powd er and extracts into a blender and blend until smooth. Fold in sprinkles and the cookie pieces. Pour baked oatmeal cake batter into a microwave safe bowl. Add more sprinkles and cookie pieces on top if desired.
- 2. Microwave for 2 - 3 minutes. Check after 2 minutes as the power of microwaves can vary! A toothpick should come out clean when inserted. Combine yogurt and sweetener. Top baked oats and sprinkle with more sprinkles and cookie crumbs if desired.
