Berry Oat Bars

  • 6 Tbsp melted coconut oil
  • 1 tsp real vanilla extract
  • 2 cups Oatsome Oat Flour Blend
  • 1½ cups protein oats
  • 3/4 cup brown sugar
  • ½ tsp ground cinnamon
  • ½ tsp baking powder
  • pinch salt
  • Blueberry Filling:
  • 2 ½ cups fresh blueberries
  • 2 Tbsp fresh lemon juice
  • 2 tsp cornstarch
  • ¼ cup coconut sugar or brown sugar


  1. Preheat the oven to 350°F.
  2. Line the bottom of a 9×9 pan with parchment paper, or cooking spray.
  3. To make the crust & crumble, place the brown sugar, melted coconut oil, and vanilla extract in a bowl and whisk to combine. Add in the oat flour, regular oats, ground cinnamon, baking powder, and salt, and stir to combine. The mixture should be a little dry and crumbly. Reserve 1 cup of the mixture, this will be your crumble topping.
  4. Add the oat mixture to the prepared baking pan. Press the mixture into the bottom of the pan in an even layer.
  5. Place blueberries, lemon, coconut sugar, and cornstarch in a bowl and stir to combine. Place the blueberries over the crust in an even layer.
  6. Evenly sprinkle the remaining crumble mixture over the top of the blueberries.
  7. Bake the bars for 45 minutes. Remove the bars from the pan and let sit for 10 minutes.
  8. Cut and enjoy!
