Baked Oatmeal

Ingredients

  • 2 cups Oatsome Organic Rolled Oats
  • 1/4 cup pure maple syrup
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp sea salt
  • 2 cups Oatsome Oat Milk
  • 2 Tbsp ground flaxseed
  • 1 Tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1 ripe banana, mashed, plus 1 additional banana for toppings
  • 1 cup strawberries, divided, (half chopped and half sliced)
  • 1 cup blueberries, divided
  • Toppings: Non-dairy, Whipped topping

Directions

  1. Preheat the oven to 375°F. Spray a rectangular baking dish (12.5″ x 8.25″) with cooking spray.
  2. Mix the Oatsome Organic Rolled Oats, baking powder, cinnamon, and salt in a large bowl.
  3. Add Oatsome Oat Milk, maple syrup, flaxseed, coconut oil, vanilla and mashed banana. Stir well to combine.
  4. Gently fold in 1/2 cup chopped strawberries and 1/2 cup blueberries.
  5. Carefully pour the oatmeal mixture into the prepared baking dish.
  6. Bake for 30 minutes or until the middle of the bake is set and the top/edges are a little golden.
  7. Remove from the oven and let cool and decorate as a flag.
